As the cooler temperatures are setting in, I feel the urge to do more cooking and baking!
Dr. Almon’s Banana Muffins
Wet Ingredients:
4 ripe bananas, mashed
1/4 cup coconut oil, melted
1 tsp vanilla extract
Dry Ingredients:
1 cup flour of choice (Bob’s red mill gluten free flour mix)
1/3 cup ground flax seeds
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp sea salt
Instructions:
1. Preheat oven to 350.
2. Mix the dry ingredients in a bowl with a whisk.
3. Mix the wet ingredients in a separate bowl with a spatula or wooden spoon.
4. Add wet to dry and mix well.
6. Grease muffin tins with coconut oil then fill muffin tins half way full.
7. Bake at 350 for 20 – 25 minutes or until cooked through. Cool muffins and enjoy while still warm.
