Naturopathic Doctor Spotlight at Erin Mills Optimum Health in Mississauga
Our first spotlight is on Dr. Kirsten Almon. Below she shares her favourite recipes, her favourite modality, and what a day in her life is like! Enjoy!
My Favourite Recipe:
CARROT GINGER SOUP
- 1 small sweet potato, coarsely chopped
- 5 organic carrots, washed and coarsely chopped
- ½” slice of ginger
- 5 garlic cloves
- 1 small onion, coarsely chopped
- ¼ cup olive oil
- 2 cups of chicken bone broth, and 2 cups of water
- Salt and pepper to taste.
Warm olive oil in a soup pot on medium. Add onions, garlic and ginger. Let cook for ~10 minutes. Add sweet potato, carrots and chicken broth. Let simmer, covered on medium for 30~40 minutes or until carrots and potato are soft. Blend soup in blender until smooth. Salt and pepper to taste.
