Sweet and Healthy Gingerbread Cake
Here we are, at the beginning of March and Spring is in sight! But let’s not kid ourselves, it is still technically winter and with that, the outside temperatures tend to go up and down. There can be nothing sweeter than a slice of something warm and delicious that goes well with a cup of tea after a play outside.
This is a great snack, especially fresh out of the oven!
GINGERBREAD Cake
- 2 cups gluten free flour (Bob’s Red Mill)
- 1/3 cup date sugar (Liva is my favourite brand!)
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 2 tsp baking powder
- 1 tsp baking soda
- 1 cup dairy-free milk, room temperature
- 1/2 cup black strap molasses (great for building iron!)
- 1/2 cup unsweetened applesauce, room temperature
Optional: Maple Cashew Cream Frosting:
- 1 cup raw cashews,
- 1/2 cup coconut cream
- 1/4 cup maple syrup
INSTRUCTIONS
Gingerbread Cake:
- Preheat the oven to 350F and grease a 9″ loaf tin with olive or coconut oil.
- In a large bowl, whisk together flour, date sugar, ginger, cinnamon, nutmeg, baking powder, and baking soda.
- Add in the remaining ingredients, and gently mix the wet ingredients into the dry with a rubber spatula. Mix until there are no streaks of dry ingredients left.
- Pour the batter into the prepared loaf tin, and place into the oven.
- Bake for 45-50 minutes, or until the toothpick comes out clean.
- Remove from the oven and allow the loaf to cool in the tin for 15 minutes, then transfer the bread to a cooling rack to cool completely before slicing.
- Serve as is or prepare the cashew cream frosting.
Cashew cream frosting:
- blend together cashews, coconut cream, and maple syrup until smooth.
- Cool then smear onto the loaf before slicing.
Enjoy this with a cup of dandy blend ‘coffee’ or lemon balm tea.
